Grilled Pumpkin

One of the greatest things about living in the state of Florida is being able to grill 365-days a year! We might not get to enjoy a traditional change of season, but we can prepare a fantastic, non-traditional snack: grilled pumpkin! Pumpkin is super tasty, and we are certain your family will love it!

For this recipe we recommend purchasing sugar pumpkins! They are sweeter in taste and come in a diameter of about 8 to 10 inches. Try and stay away from traditional Jack O’Lanterns.

Ingredients

  • Sugar Pumpkins (8 to 10 inches in diameter)

  • Olive Oil

  • Fresh Rosemary, chopped

  • Sea Salt

Grilling Directions:

  1. Clean and preheat grill to medium-high

  2. Wash and dry pumpkins, cut into ¾ inch slices. You will want to remove the seeds and stringy portions of pumpkin.

  3. Brush both sides of pumpkin slices with olive oil. Apply liberally.

  4. Place pumpkin slices on the grill for 5-minutes, or until grill marks appear, then turn to the other side until the pumpkin is pierceable by a fork.

Serving Tip: You might want to sprinkle additional sea salt on the pumpkin slices since a considerable amount will fall off during grilling.
